Mercure Singapore Bugis is excited to announce the appointment of Chef Kenneth Eng as the new Executive Chinese Chef of Song Garden, the hotel’s well-appraised Chinese restaurant.
With a career spanning over 17 years in Chinese cuisine specialty, Chef Kenneth will play a leadership role in showcasing a fresh vision – traditional cuisine with modern touch. He brings with him a wealth of culinary experience in prestigious establishments including Jumbo Seafood Group, Min Jiang at Goodwood Park Hotel, Resorts World Sentosa and TungLok Group (Taiwan and Singapore).
The arrival of Chef Kenneth heralds the launch of new signature dishes, such as Ginger Candy Prawns, Stir-fried US Marbled Beef with Morel Mushroom in Black Pepper Sauce, Stir-fried Pork Collar with Guilin Chilli Sauce, Sautéed Australian Lobster with Black Truffle Essence and Crispy Duck with Calamansi Barbecue Sauce. In this role, he will lead the kitchen operations, prioritising staff welfare and driving growth for Song Garden’s business.

Chef Kenneth has always been passionate in exploring diverse cuisines from around the world. His culinary journey was influenced by the cherished relationship with his mother’s exceptional cooking.
A former songwriter known for popular hit “嫁給我” by 杜德偉 Alex To, Chef Kenneth has transit from music to culinary arts. A guitar enthusiast who moved from Malaysia to Singapore upon graduation, he connected with a renowned music teacher that inspired him to pursue back in Taiwan. Now in Singapore, he continues to cultivate his passion in culinary art.
